What a delight it was to read Tinka Weisblat’s article “In the Kitchen with Fannie Farmer,” (Recorder, Jan. 17). My mother, Dorothy Moore Aubry, was a proud 1945 graduate of Miss Farmers’s school. Mom was a fine home cook and a bit ahead of her time in terms of food and nutrition. She was proud of the two pro jobs she held after graduation, one at the Smith College Faculty Club and then in the Dietary Department of Franklin County Public Hospital. Mom wore out her copy of The Boston School of Cooking, but I have the 3-ring notebook she kept while a student there. Chapter one starts with the “order of work”: “Be in the kitchen ready for work at 6:00 prompt, learn to work neatly, carefully, quietly, quickly and efficiently, remember, cooking is the art of preparing food for the nourishment of the body.” Pretty fair advice.
